3 варианта традиционного русского обеда: солянка, уха из стерляди и щи из щаницы
Времена, когда рецепты традиционных русских блюд передавались из поколения в поколение, прошли. За ответом на вопрос, как правильно приготовить солянку, уху и щи, многие скорее обратятся к Google, нежели к старшим родственникам. Старорусская солянка
Ингредиенты:
Бульон говяжий — 3 л
Огурцы соленые — 1 кг
Квашеная капуста — 250 г
Опята — 250 г
Лимонный сок — 50 мл
Лук репчатый — 600 г
Язык отварной — 350 г
Копченая свиная грудинка — 350 г
Масло растительное — 50 мл
Паста томатная — 200 г
Говяжья голень отварная — 350 г
Соль — по вкусу
Сметана — 40 г на порцию
Способ приготовления:
1. Соленые огурцы очистить и нарезать ломтиками. Залить водой и поставить тушиться на 1-1,5 часа.
2. Репчатый лук нарезать соломкой и обжарить на растительном масле с добавлением томатной пасты.
3. В кипящий говяжий бульон положить квашеную капусту и соленые огурцы. Проварить в течение часа.
4. Добавить пассерованный лук и опята.
5. Язык, копченую грудинку и отварную голень нарезать соломкой и положить в кастрюлю. Проварить 10 минут, посолить, влить лимонный сок и снять с огня.
6. Подавать со сметаной в отдельном соуснике.
Щи из шаницы
Ингредиенты:
Бульон говяжий — 2,5 л
Морковь -135 г
Лук репчатый — 280 г
Картофель — 800 г
Лавровый лист — 1 г
Перец — 1 г
Соль — по вкусу
Чеснок — 5 г
Шаница (квашеные верхние листы капусты) — 600 г
Говядина отварная — 30 г на порцию
Аджика — 14 г на порцию
Соль черная — 6 г на порцию
Способ приготовления:
1. Морковь и лук нарезать соломкой. Картофель — брусочками.
2. Бульон довести до кипения. Положить морковь и лук. Далее — щаницу. После — картофель. Варить 1,5 часа. В конце добавить чеснок, специи и соль. Снять с огня.
3. В супницу положить разобранную на волокна говяжью голень и налить щи. Подавать с аджикой и черной солью.
Уха со стерлядью и судаком
Ингредиенты:
Филе судака — 30 г на порцию
Филе стерляди — 30 г на порцию
Помидоры черри — 10 г
Лук зеленый — 2 г
Петрушка — 2 г
Рыбный бульон — 2,5 л
Картофель — 400 г
Лук репчатый — 175 г
Сельдерей — 75 г
Морковь — 50 г
Масло сливочное — 50 г
Соль — по вкусу
Перец — 2,5 г
Способ приготовления:
1. Репчатый лук, морковь и сельдерей нарезать мелкими кубиками и обжарить на сливочном масле. Пока овощи пассеруются, нарезать кубиками картофель.
2. Рыбный бульон довести до кипения, добавить картофель, отварить.
3. Положить остальные овощи, поварить 5 минут. Посолить, поперчить.
4. Судака и стерлядь (по 30 г на порцию) положить в кипящую уху и проварить в течение 2 минут.
5. Добавить нарезанные кубиками черри и рубленную зелень.
